Combine all ingredients in a large mixer bowl.
Mix on low speed for about 3 minutes and gradually increase speed.
Mix for about 15-20 minutes on medium speed. Once it reaches a creamy consistency you can set it to high speed (if you do it before you'll have a lot of spilling.)
Ok, here's the deal. First time I tried this recipe I gave up when I was half way through it because I though it would NEVER get to that fluffy mousse-like consistency ;(
I was so very wrong. Little did I know that in fact it does get to that, but not before those 15-20 minutes. So be patient, set a timer and do something fun in the meantime :)
And here it is what your coffee should look like :) Now it's ready to be served!
Put about 2 tablespoons in a cup (amount will vary to taste)...
...pour in some HOT milk till you fill your cup!
And there you have the world's richiest and creamiest cappuccino EVER!
Store your "capuccino merengue" in an airtight container and keep it in the freezer! Whenever you want to make yourself some, just take it out, use it and then put it back in the freezer! :)

- 1.0c boiling water (240ml)
- 1.0c Granulated sugar (300g)
- 1.0oz Soluble/Instant coffee (60g)
- 1.0Tbsp Cocoa powder
- 1.0tsp Vanilla extract (optional)
