I always wondering how to use piloncillo in cooking so I bought 2 home to try.
I chopped away blocks of piloncillo but that's too much work!
I found some tips and put the block into microwave for 20 seconds.
Then press them down and see it crumbles. Oh my, so much easier!
Be careful not to melt the sugar, if it melt like this, leave it and wait for a few second, it will back to like the hard sugar.
Store it and use it as sugar or syrup for ice-cream, pan cake, coffee or replace brown sugar in Thai recipes. Or made a delicious cake with piloncillo will be deep flavor and not overly sweet!
