How to use leftover mash for breakfast

We had mash with our evening meal last night and I don't know what I was thinking, but I made tooo much. So this morning we are having "mash leftover breakfast."

Start by frying your bacon until it is crisp, set aside and save the dripping on the frying pan. Add your eggs to the cold mash and stir.

Fry the mash in the bacon dripping. Use your " I'm going to flip you" to smooth the surface of the mash cakes a bit. Fry them on the first side until they are easy to move and then flip them.
