Put leftovers in pot.
Put in 2-4 tablespoons of curry paste and let simmer.
Continue to simmer, can add about cup of water.
Add coconut milk.
Let simmer more.
Add water chestnuts. Continue cooking.
Serve over rice. Can also add salt, pepper, and/or sugar to taste.
