A Zester has two settings. There are 5 sharp holes at the top and the middle has a very thin blade.
Hold the lemon firmly in one hand, press the middle of the Zester into the fruit until it catches. Applying pressure, especially If the lemon isn't very fresh, carefully pull the tool across the fruit
Long strips of lemon zest that can be used for spirals, garnishes, or for making candied zest. The remaining lemon can be used as a decoration.
Use the top holes and pull against the lemon for short and even lemon strips.
