After harvesting the ramps, clean thourghly
Trim ends
Cut off tops and save to make pesto
Bring pickling brine to a simmer
Wash jars and lids
Sterilize in combi oven at 225F (107C) steam for 10 minutes.
Fill jars with ramp bulbs
Loosely screw on tops
Preheat combi to 190 steam
steam in the combi oven at 190F (88C) for 90 minutes to to cook the ramps to a tender crist texture and to seal the jars
Ready to use or store
