Thin slice 6 jalapeños
Think slice 2 lbs of Roma tomatoes
Slice 2 onions
Sautée onions in olive oil for 2-3 minutes
Add jalepenos and continue cooking on medium for 3 minutes
Add Roma tomatoes and continue cooking for 2-3 minutes
Add salt to taste
Cover and continue to cook on low for 5 min
Do not overcook, texture of tomatoes and jalapeño should still be firm
Mix fresh masa with chicken stock
The final masa product should look like this
This should be the texture of the masa
Slice two packs of cheese
Roll the masa into a ball
Flatten the masa to Palm size and use a tortilla press to flatten
Add jalapeño, onion tomatoes and cheese add a bit of cooking liquid to moisten
Steam for 25-35 minutes
Serve!
