Power on your Alto-Shaam smoker oven
Place crab meat into a pan and have a pan of ice
Place soaked wood into the chip tray
Load wood cop box into the oven
Place a pan of ice above the wood box to absorb the heat from the burning chips
Place the crab meat in a pan for smoking
Hold the smoke button for 5 seconds to enter cold smoke mode
Set the smoke time for 15 minutes
Press start and leave the crab in the oven for 30 minutes
Remove smoked crab meat
Fire roast the corn
Mix together all ingredients. Scoop mixture to sauté
Bread in Pablo before sautéing
Sauté in oil
For banquets or catering reheat in the combi in convection mode at 350F (177C)-10 min. at humidity 5.
