STEPS
INGREDIENTS

First, buy a good BBQ rub and season all sides of the meat. Top, bottom, and sides.

Second, make smoke bombs! Dampen the wood chips slightly so they smoke more.

wrap them in foil then poke a few holes to let the smoke out.

(the finished smoke bombs)

Place them down below the cooking grate next to the fire. Turn on the grill and let the smoke bombs heat up. (about 300 degrees)

The smoke bombs will not make a lot of smoke but you should be able to smell when they are ready.

With only one burner on, place the meat on the opposite side of the flame. Smoke the meat for about 30 mins. DON'T open the lid you'll let all the smoke out!

Fourth, take the meat and wrap it tightly in foil, before sealing it add about 1/2 a cup of apple juice the steam the meat till its tender.

Last, take the meat out of the foil and on low heat add a layer of your favorite BBQ sauce. Let it glaze for about 2-3 minutes then do the other side. Then enjoy!
