Check wood pellets (I prefer Apple). Set Traeger to smoke setting with lid open. Prep ribs while waiting for the Traeger to start up. Generously cover both sides of the rib racks with dry rub.
Smoke ribs uncovered and meat side up for 3 hours on the "smoke" setting.
Prepare tin foil boats for each rack to set in after 3 hours is up. Place racks, ribs side down, and sprinkle with 1/4 cup of brown sugar, drizzled honey, and 1/4 cup of apple cider per rack & boat.
Turn up the heat to 225 on the Traeger. Seal up tin foil for each rack. They might require double layers to prevent punctures. Place tin boats back in the smoker for an additional 3 hours.
At the end of the second cook cycle remove the racks from their foil. Carefully brush BBQ sauce on all sides of the racks. The ribs will be fragile at this point, so be careful not to break them up.
Place the uncovered ribs back in the smoker, still at 225. Cook for an additional 1 hour, for sauce to tighten. Remove ribs and let them rest for 15 minutes before serving.
