Denmark has for many years advised against using eggs that are not pasteurized...
...to dishes that are not to be cooked or fried...
...due to the danger of salmonella poisoning.
It is now legal to use unpasteurized eggs, because salmonella is nearly eradicated in our country.
When salmonella bacteria almost always sits on the outside of the egg shell...
...I choose therefore, to split an egg in this way...
Beat the egg in a bowl
Then wash hands thoroughly
Then you take the egg yolk with the fingers...
...and puts it in another bowl
So easy it can be done, and no risk for salmonella poisoning
...so should there be salmonella, I avoid to mix it in the egg
