Here are the supplies. Note that this amount of salt and sugar is enough not only for the piece of salmon, but also for the whole fish.
Wash the fish and divide it in half
Mix sugar and salt up
Salt both sides of the fish with this mixture. Note that the layer of the mixture should be quite thick
This is the other side. Also note that you need to salt the place round the spine more than other parts.
Put it in the dish and leave for 24 hours (room temperature). You should turn it over at least 2 or 3 times in these 24 hours!
Like this. Afterwards put it in your fridge and keep there for 2 days
This is how it looks like afterwards. Remove the remains of salt and slice the fish up in thin pieces. During the process remove the bones.
