Remove roast from refrigerator 20-30 minutes before you begin to prep. Pre-heat oven to 425 degrees fahrenheit.

Trim roast of any unwanted fat and silver skin.

Season liberally with kosher salt and fresh ground black pepper. Rub it in!

Next, rub with a paste made of fresh garlic, fresh thyme, fresh Italian parsley, fresh oregano, and olive oil.

Place in a roasting pan on a roasting rack. Place in oven @425 degrees for 20 minutes. Reduce heat to 300, cook until an internal temperature of 125 is reached. Ovens vary.

Let roast rest for at least 20 minutes before slicing. The internal temperature will rise 5-8 degrees in this time. Enjoy!
