Peel garlic cloves

Make small slits in the leg to insert cloves

Also insert rosemary

Season with salt and pepper

Sear in a hot pan

Roast in the Alto-Shaam cook & hold. For medium rare Cook temp 250F (121C) Probe cut off 105F (40C) Hold temp135F (57C) Hold 1-8 hrs. Longer hold time = more tender

Ready to slice and serve
