How to roast cauliflower perfectly

How to make perfectly roasted Cauliflower with brown butter sauce.

Preheat oven to 450 degrees Fahrenheit.

Trim stem and any leaves from the bottom of Cauliflower.

Put cauliflower into oven proof pan (cast iron is preferrable) and pour olive oil onto cauliflower and rub over entire cauliflower until coated.

Put cauliflower into oven for 45 minutes.

Remove from oven. Melt butter in pan and baste over cauliflower. Sprinkle with a four finger pinch of salt. Return to oven.

Cook additional 30-45 minutes until tender, basting  every 7-10 minutes with butter (which should be brown by now). When you can insert a pairing knife and feel no resistance, cauliflower is done.
