How to remove uni from a live sea urchin

Start with a live sea urchin.

Cut a wide circle around the mouth using heavy duty kitchen scissors.

Turn over to drain the contents into a bowl.

Discard the cut out opening of the sea urchin and all the liquid contents.

Scoop the roe or gonads from the shell.

Repeat until all roe or gonads are removed. Rinse and remove any dark matter before serving.

Serve and enjoy raw, or use in your favorite recipes.
