Cut the white bulbs from the green stalks. Keep groups banded together.
Place bunches in disposable cups with water covering the roots. Change the water every day and rinse the roots before they are put back into the cups. If not, they will rot and smell truly awful.
After a one week growing period, stalks will spread and get a little wobbly. Cut the green stalks at this point.
Wrap stalks in moistened paper towels. Place in plastic bag & store in the fridge-not the crisper drawer. Use to make handy green seasoning or any recipe that calls for scallions. http://goo.gl/wRi61C
