How to ratatouille with feta cheese for meatless monday

I just love ratatouille (which for those who don't know is a kind of vegetable stew). Go ahead and make it! If you don't fancy vegetarian food serve it with some spicy sausages.

It smells really good in the kitchen now. Remove the lid, and add herbs of your choice, I added dried thyme and rosemary. Continue to cook for another 15 minutes or so.

It didn't get as "saucy" as I like it so here I added the tomato paste, extra water and perhaps 100 ml of a homemade tomato sauce. It also works with canned tomatoes, but I didn't have any.
