How to ratatouille with feta cheese for meatless monday
I just love ratatouille (which for those who don't know is a kind of vegetable stew). Go ahead and make it! If you don't fancy vegetarian food serve it with some spicy sausages.
Chop the onions and the garlic cloves.
Also chop the aubergine and the zucchinis.
Fry the onions and garlic for a minute or so.
Add the chopped aubergine and zucchinis.
Add the tomatoes. I took like 4 cherry tomatoes instead of 1 ordinary one.
Chop the tomatoes...
..and add them to the pan.
Stir. Add the chopped chili as well as the..
...chopped bell peppers. Finally add the water along with saltand pepper. Put on a lid and boil for somewhat 5 minutes.
It smells really good in the kitchen now. Remove the lid, and add herbs of your choice, I added dried thyme and rosemary. Continue to cook for another 15 minutes or so.
It didn't get as "saucy" as I like it so here I added the tomato paste, extra water and perhaps 100 ml of a homemade tomato sauce. It also works with canned tomatoes, but I didn't have any.
When done, put on a plate and serve, either as it is...
Or with feta cheese and perhaps pasta/bulgur/quinoa.
Add some basil and sprinkle som pumpkin seeds on top. Enjoy another Meatless Mlnday!
- 1/2 Yellow onions
- 3.0 Garlic cloves
- 1.0 Red chili
- 1/2Tbsp Olive oil
- 1.0 Aubergine (small)
- 1/2 Zucchinis
- 1/2 Yellow bell pepper
- 1/2 Red bell peppers
- 3.0 Tomatoes or 16 cherry tomatoes
- 100.0ml Water
- 1.0tsp Oregano or thyme
- 1.0pch Salt
- 1.0pch Black pepper
- Fresh basil (as much as you like)
- 3.0Tbsp Tomato paste
- 100.0ml Canned tomatoes or homemade tomato sauce
- 225.0g Feta cheese
- 6.0Tbsp Pumpkin seeds
