Chop the chocolate
Cut up butter. Add to chocolate for melting.
Cover and place into combi oven.
Steam chocolate and butter at 212F (100C) for 10 min.
In a bowl combine remaining ingredients and mix.
Stir butter and chocolate to combine.
Temper and stir chocolate mixture into cocoa mixture.
Spray with release flexi molds.
Pour in batter and scrape.
Wrap in plastic.
Steam in the combi oven at 190F (88C) for 40 min. Then chill.
Ready for service.
