Clean Spring Onions
Combine ingredients in sauce pan and melt sugar and simmer for 2 minutes.
Place jars in a perforated pan to sterilize.
Place Jars into the Alto Shaam CTP Combi oven on steam.
Fill sterilized Jars with Raw Spring Onions.
Top the onions with the Brine Mixture, Place the lids on the jars and hand tighten to leave a little room for air pockets.
Set combi again and steam jars for 25 minutes.
REmove Jars from combi, Fully tighten lids and let sit for 20 min on table. Wait for the lids to pop and seal. If the lids never seal after 12 hours place onions in fridge and consume within 5 days.

- 1.0c Sugar
- 1.0c Water
- 1/2oz Bay Leaf
- 3/4tsp Black Peppercorns
- 1.0tsp Cinnamon
- 2.0qt Ball Jars
