How to pick a good pineapple and cut it like a pro

What to AVOID: pineapples with soft spots, brown-green colored exteriors, musty scent or runny juices, also pineapples with wilted or heavily bruised crowns/ green tops. >>>

Best way to know how ripe a pineapple is: flip it upside down and look at its bottom. If it is all soft and dark + moldy (green or pink) don't buy, it's too old and over ripe >>>

Ok to buy if: minimal mold on the bottom (a little is ok) though do check that the bottom is still firm and a healthy green color.

Its always best to buy under ripe pineapples and allow them to ripen at room temp at home for 2-3 days, once the bright green color changes to a deep dark green the pineapple is ripe and ready to eat

This is what it looks once you remove the rind. Now discard the rind and place the pineapple under running water to remove rind debris and prevent cross contamination. I wash the knife and board too.

Once all is clean proceed to cut the pineapple to the desired shape. You can do all slices and then remove the fibrous core/center of each slice with a round cookie cutter.

Or if you are going to juice or cut in cubes slice like shown, top to bottom vertically to obtain the edible flesh and discard the fibrous core.

Store pineapple in a container in the fridge and eat or freeze remains within 3 days of cutting.

Ideas: pineapple upside down cake, fruit salad, pizza, sushi, juices, smoothies, pineapple limeade, grill with cinnamon-sugar or freeze in a ziplock and use in smoothies or coconut water as ice cubes.
