Use one hand to hold the tail of the crawfish and the opposite hand to hold the head of the crawfish.
Pull and break the head from the tail. Many people in Louisiana suck the head. I don't do this step.
Take the tail and peel off the first ring of shell.
Rock and gently pull tail meat while pushing with thumb at bottom of tail. Eat tail meat.
