Take 50ml of olive oil and grease a med-large sized baking tray. Pour the remaining oil into a bowl, crush the garlic cloves, dice the onion, then add to the oil. Add one tblspn of salt and pepper

Stir the mixture well, so all in incorporated. Thinly slice the tofu and place on the backing tray. Add the oil mixture to the tray by spoon (it should not be runny!!)

Chop the coriander and sprinkle evenly over the tofu. Take the remaining salt and pepper and spread evenly. Place the tray on the top shelf of the oven for 12-15 mins, or until the tofu is browned.

  • 250.0ml Olive oil
  • 2.0Tbsp Salt
  • 2.0Tbsp Black ground pepper
  • 250.0Tbsp Plain white tofu
  • 1.0bnch Coriander
  • 1.0 Baking tray
  • 2.0 Garlic cloves
  • 1.0 Preheated oven 180oC
