INGREDIENTS
Gather all ingredients for baking the muffin cake first. Preheat oven at 400 Fahrenheit or 175-180 Celsius.
Melt the butter
Crack eggs first into a bowl and add melted butter
Whisk until smooth. Then Take your 1st orange and grate it to get the zest. Add it to eggs n butter
Juice other 2 oranges and Add it to batter. Mix
Now add 3/4 cup sugar. Beat for a minute or two
Add all the dry ingredients now I.e. Flour, baking powder, baking soda, and a pinch of salt
Beat for a minute now to get a homogeneous batter
Grease n dust your pan
Transfer batter to the pan
Pop it in the oven preheated at 400F or 200C for 20-30 minutes or until done when the toothpick comes out clean
Baked. A little over browned Cz I took it out a little late. but that won't matter since you're gonna cover it with mousse. Let it cool
In the meanwhile, make your mousse. Get your stuff. Chocolate, eggs, sugar, salt. Quantity of each mentioned in the supplies section
Melt your chocolate chips over a pan of hot water aka tempering the chocolate. Butter is optional
Should turn out smooth when kept stirring
Add a bit of dark chocolate if you want a bit more intense flavor. I like it intense
While your chocolate is tempering, whisk some coffee with 2 tsp coffee and 2tbsp water. Cz we are doin a chocolate coffeeish mousse
Add it to the melted chocolate and immix properly. when it's done, nice n smooth, take it off the heat and let it cool a bit
Now separate eggs carefully. Keep egg whites in separate bowl. And add egg yolks to the tempered chocolate one by one incorporating it quickly so the egg yolks don't scramble in the chocolate
Whisking in egg yolks transforms your tempered chocolate into silky and glistening
Now on to your egg whites. Whisk them. Make sure there ain't a single droplet of water in the bowl or on the equipment Cz that would ruin it
Whisk until it forms peaks
Stiff peaks
Peaks so stiff that if you lift your bowl upside down over your head it won't fall
Carefully, add 1 spatula of egg whites to the chocolate melt. Fold in. Gently. Very gently
Add the rest of the egg whites. Fold in again. Do NOT over mix or fold in too fast. Else the mousse won't be fluffy n light
Your Mousse is done. This is a secret French chocolate mousse recipe I found which is a secret no more !
Now make orange syrup to moisten the cake before putting on mousse. Juice 2 oranges again. Put it in a pan to heat up. Add sugar. Let it cook for few minutes
Lower the flame when it starts boiling. Cook for 2 to 3 minutes more
Coming back to the cake. Poke holes in it with a fork to let the syrup absorb. Here I've poured syrup already n let it sit for few minutes to soak it all up
Now, the fun part. Smear chocolate coffee mousse generously
I couldn't get strawberries but I had to use something red. Found pomegranates. Decorate as you like. I wanted to keep it simple
Take broken dark chocolate pieces. Set it however you like
Looks like some ancient ruins with treasure hidden beneath. And X marks the spot.. Dig in !
Done. Cool the cake in the fridge overnight or at least for few hours. Enjoy my bday cake. I like it minimally done yet classy. Make it on your bday or for any occasion. Make it with passion n love !
Serve the remaining (if) chocolate mousse in glass. Ppl will love it!
- 3.0 Oranges
- 1/2c Butter
- 3/4 Flour
- 2.0 Large Eggs
- 1.0tsp Baking powder
- 1.0tsp Baking soda
- 3/4c Sugar
- For mousse
- 250.0g Semi sweet chocolate
- 3.0 Eggs
- 2.0Tbsp Sugar
- 1.0 Pinch of salt
- 3.0Tbsp Strong brewed Coffee/espresso
- For Orange syrup
- 2.0Tbsp Sugar
- 2.0 Oranges to juice
