Wash the coconut and hold it "eyes" side up.

Gently press a sharp point against each "eye" until you feel the one that gives. Push through, twist, and create a hole.

Using a straw, do a taste test. If it doesn't taste fresh or if it tastes rancid or a little "off", discard. The coconut meat will also be "off".

Place in a plastic bag & whack with a hammer, piƱata style. Keep away from your face and look out for the backswing! Or drop it against a hard surface. The meat is white and firm - not yellow or oily.
