Cut sirloin into small cubes and cut off fat. Add oil to pan and heat on medium-high. Add steak to oil.

Season steak with ground red pepper, black pepper, red pepper flakes, sea salt, ground cayenne pepper to taste. Cook through.

In a separate pan dice all veggies, red, yellow, orange, green bell peppers, and onion or half of onion add to heated oil. Season with the same spices as steak and cook till soft.

Heat tortillas on a baking sheet in oven for a few minutes. Shred pepper jack and cheddar cheese if not already done and mix together in bowl.

Now add everything to tortilla! I also add lite sour cream, fresh lime juice, and fresh cilantro to mine! Enjoy!
