1 mix egg yolks lemon juice and a little bit of light olive oil. Let the mixer run slowly until all is emulsified. at medium speed very slowly drip in olive oil, I use a Turkey Baster,
the Turkey baster will allow a small amount of olive oil to be incorporated at a time. keep blending until soft to medium firm peaks form salt and pepper to taste This will keep in the fridge

- Heavy mixer like KITCHEN AID
- - 2 egg yolks
- - baked garlic ( as a flavor choice only)
- - Cup light olive oil
- - 1 plastic Turkey Baster to drop in the
- in the olive oil very slowly
- as it emulsifies with the egg mixture
- - a pinch of salt
- - 2 tsp lemon juice
- - 1 Glass container with lid to store
- in fridge. It will keep 1 week
