Preheat the oven to 400 degrees. Place the tomatoes & garlic on a baking tray lined with foil. Drizzle with olive oil & season with sea salt & black pepper. Roast for 15-20 minutes.
Spiralize a beet to make the beet noodles.
Place the beet noodles on a baking tray lined with foil. Drizzle with olive oil & season with sea salt & black pepper. Toss to combine.
Add the beet noodles to the oven and cook for about 2-3 minutes. Remove from the oven & place the mozzarella on top of the noodles.
Put back in the oven & cook for another 5-7 minutes until they mozzarella has melted & the noodles are darker in color & have softened.
Remove the tomatoes from the oven.
Place the beet noodles in a bowl and top with the melted mozzarella, garlic roasted tomatoes, & some fresh parsley & basil. Enjoy!
