How to make wild salmon potatoes and avocado mayonaise

INGREDIENTS
Scrub well and Boil potatoes. Here I am using roosevelt potatoes. I like the color because I will keep the skin. You can use any kind of your choice. Don't use the ones used to make mashed potatoes
Put 2 TBsp olive Oil in a deep bowl
Add 2-3 TBsp of freshly squeezed lemon juice add 1 Tsp of salt
Add the avocado

2 peices of wild salmon 250 grams each.
Put them on a tray lined with a parchment paper. Put the tray in cold oven(without preheating) . bake at 200 C - 10 mins. Put off the oven and leave them for 10 more mins.
Today I bought ready cooked beet roots. But you can boil raw ones or even better you can roast them...wrap in foil and put them in oven at 180 C - 1 hr
Cut the cooked beet root
The fresh sweet peas almost 200 gms
Cover wit water and microwave for 2 mins
Strain them. They will b hot almost cooked. And will keep a great green color...all the chlorophyll
Cut the scalions in 1/2. Cm rounds
Cut the it the chives
Cut the dill
Time to take out the salmon from the oven
Arrange your preparations and take out the salmon from the oven serve them while still hot and very moist. It is delicious if you like salmon
Garnish with cut chives, dill, and scallions
Put salt pepper to taste
Another presentation . Flake salmon mix with avocado, mayonnaise, sweet peas put them in the middle of a flat serving dish and put potatoes and beet roots around garnish with the herbs and scalions
