Chop up all the onions, tomatoes, green chillies and any other veggies you prefer. I used carrots and green beans. Peas would be a great addition too.
Dry roast couscous or wheat rava ( you would get it in any Indian grocery); and keep it aside.
In a pan heat a little oil and add mustard seeds and cumin.
After they start spluttering add onions and green chillies.
Let the onions cook a little and add tomatoes
In about two minutes add your veggies.
Add salt
Mix and cover the pan with a lid for about a minute..
After the veggies turn tender add in the dry roasted couscous or wheat rava
Mix well and add water.
The Upma or couscous mixture will start to bubble.. You have to keep mixing..
Garnish with cilantro and done.. Add in more water if you prefer softer/watery texture.
