Boil water in a large pan with salt. When water starts boiling, place peppers in water and blanch for 3-4 minutes.

Meanwhile, warm oil in large skillet, over medium heat.  Saut\u00e9 onions for 5-10 minutes until soft.

  • 1.0tsp Salt
  • 4.0 Bell peppers (remove top and seeds)
  • 1.0Tbsp Olive oil
  • 1/2c Chopped onion
  • 2.0c Cooked rice
  • 15.0oz Black beans, drained and rinsed

  • 8.0oz Shredded Mexican cheese blend
