Preheat oven to 350 degrees.

(Top picture) Cut the tops off and remove seeds from peppers. (Bottom left) Chop onion. (Bottom right) Drain and rinse black beans.
Boil water in a large pan with salt. When water starts boiling, place peppers in water and blanch for 3-4 minutes.

Meanwhile, warm oil in large skillet, over medium heat. Sauté onions for 5-10 minutes until soft.

1) Mix rice, tomatoes, beans, onions, 1 1/2 c. of cheese, seasonings. 2) Fill peppers with rice mixture. 3) Cover filled peppers with remainder of shredded cheese. 4) Bake at 350 for 30 minutes.

So yummy!
