INGREDIENTS
Gather ingredients
Heat the olive oil over high heat in a large stock pot
Cut the ingredients depending on how long you will cook it tje longer the time the biger the pice
Add the mirepoix ingredients and stir to coat them in the oil cook until brown
Sprinkle with salt
Add garlic and tomato paste cool for 2-3 mim or until paste turns a rust color
Add final ingredients and simmer for 1 and 1/2 hours
Cut onions and carrots
Grab these ingredients
Drain the stock
Add 1 tblsp of vegetable oil to a pan
Measure out 4 cups of the stock
In the stock pot heat oil over medium heat cook onion, garlic and carrots stirring occasionally for 5 minutes
Add the stock 1 can of beans corn and pepper bring to a boil
In a food processor puree the other can of beans and the stewed tomatoes add to pot reduce heat simmer for 10 - 15 minutes until carrots are tender
