You need 1 c. medium diced celery.
You need 1 1/2 c. medium diced carrots.
You need 2 cups of medium diced onions.
Add all mirepoix to a stock pot with oil. Make sure to include the ends of the vegetables.
Sprinkle salt.
Add 1 1/2 t. Minced garlic
Add 1 T. of tomato paste.
Add rosemary, dried thyme, parsley, and peppercorn.
Add 3 oz of mushrooms.
Add 2 1/2 quarts of water.
Simmer for 1 hour and 30 minutes.
