2 cups of water
1 bay leaf
1 tsp of salt
Whole bag of Udon noodles
1 cup vegetable broth
half block of tofu
cube the half block of tofu
slice either part of the spring onion for which ever taste you would like for this we choose the leaf half instead of the stock part
bring water, vegetable broth, bay leaf and salt to a boil
add the noodles stir and let it sit until the noodles are soft but still a little firm
add spinach
stir in spring onion
add the cubed tofu and stir
once all is mixed it is ready to serve
