Here we go!
This recipe tastes just like the real thing! Can be frozen overnight into Fudgecicles or served right away, as a Frosty. No added sugar, and no sugars other than from the fruit.
Adapted from a recipe found on the Coffee & Sunshine blog: http://amy-estes.com/write/vegan-frosty-fudgesicle/
Gather your ingredients and your blender.
Put all ingredients in blender: put coconut milk in first, then the sliced avocado, and then the remainder of the ingredients, adding ice last.
Everything is in and ready to go… If you're working with a less-powerful blender, add ice in a little bit at a time after beginning the blending process.
Blend until everything is completely smooth, smoother than you ever thought possible... Depending on your blender, you may need to open the blender and stir a bit to get the mixture going.
I added another tablespoon of cocoa powder, because I like mine quite chocolatey.
Take out your popsicle molds, I keep mine in the freezer for a few hours before I make my popsicles.
Fill em up!
Ready to freeze!
Yummy ness in the works!
I make Frosty cups as well. You can serve them just like this, or freeze overnight.
I actually cover these with foil before letting them freeze overnight, and then remove from the freezer about 30 minutes before I want to serve them and set them on the counter.
Perfection! Run hot water over the mold to release, 'cause a popsicle without a stick isn't a popsicle!
