In another bowl bring together the coffee, oil, vanilla and vinegar.

DON'T combine the dry and wet ingredients until your oven is preheated to 350 and your cake pan is greased!!!

This is bc the vinegar reacts with the baking soda and powder, enabling cake to rise. It can lose its strength if left outside the oven for a while, which means your cake might not rise enough

Once oven and baking pan are attended, make the batter. Immediately transfer to pan and bake.

  • 2/3c All-purpose flour
  • 1.0c Sugar
  • 1.0tsp Baking soda
  • 1.0tsp Baking powder
  • 1/2tsp Salt
  • 1/2c Veg oil (canola)
  • 2.0Tbsp Shortening
  • 2.0Tbsp White vinegar
  • 2.0tsp Vanilla extract
  • 1.0c Filtered coffee (concentrated)
