First freeze your ice cream bowl overnight or as per manufacturer's instruction.Gather all your ingredients.
Scoop the avocado flesh. Add the coconut cream only - reserving the transparent liquid at the bottom of the can. Add all ingredients except chia seeds and blitz till smooth.
Meanwhile soak the chia seeds in the reserve liquid. Now get ready the ice cream maker and slowly pour in the avocado mixture and churn.
Churn for 3 minutes and then add the soaked chia seeds in liquid. As you can see the sides of the bowl have frozen and the ice cream has thicken.
Churn for a further 5 minutes & place it in a container in the freezer for at least 4 hours.You may garnish this with mint, desiccated coconut or for a festive feel some pomegranate molasses.

- 3.0Tbsp Rice Malt Syrup
- 3.0Tbsp White Chia Seeds
