INGREDIENTS
Over medium heat, bring 6 TB water, 3/4 cup sugar and 1 1/4 cup white corn syrup; to a boil
Once this syrup starts to boil, let it come to 245°
While the syrup is boiling, add 4 egg whites to a mixing bowl. Add a pinch of salt and cream of tarter
Beat for two minutes with a whisk attachment
After the two minutes, add a TB of sugar and 2 TB vanilla. Beat another two minutes and turn off to wait for syrup to reach correct temp.
Once the syrup is close to 245°, gently add to the beaten egg whites
Beat with the paddle attachment until it's smooth and fluffy. This should take about 3-4 minutes
You can add anything to this! Your favorite jam, put it on cookies, hot chocolate ..I always add it to my cream cheese frosting
Place in a jar and store in fridge until you're ready to eat! I use this in my s'mores bar recipe, the Mississippi mud brownies too. All of those are on my page. Enjoy! x
