How to make vanilla cupcakes with berries
Lime and vanilla cupcakes with raspberry & blueberry. On top a cream cheese frosting. From this recipe 12 cupcakes in the colours of the American flag 🇺🇸

Ingredients needed for the dough
Add egg, sucker and vanilla sucker to a bowl
Whip until foaming and light yellow/white
Melt the butter
Add milk and butter to the mixture and mix together
Add flour, baking powder and salt and mix together
Take the peel from the lime
Add the peel to the mixture together with juice from the lime
The next part I forgot to take photos of. Mix the dough together. Put a couple of berries in the bottom of the muffin tin and cover them with the lime and vanilla dough
Bake in the oven at 175 C (347 F) for 15-20 minutes until a toothpick comes out of a muffin clean. They should look something like this afterwards
The topping: Add icing sugar, soften butter, cream cheese, lime juice and vanilla sugar to a bowl
Whip until it is creamy and soft
Smear on the cupcake or use a piping bag. If you would like, you can decorate with raspberry and blueberry for a more white, blue and red cupcake.
- 2.0 Egg
- 150.0g Sugar
- 1.0tsp Vanilla sucker
- 75.0g Butter
- 0.75l Milk
- 275.0g Flour
- 1.5tsp Baking powder
- 1.0tsp Pinch of salt
- 3.0tsp Lime (juice and peel)
- 200.0g Blueberry
- 200.0g Raspberry
- 60.0g Soft butter
- 400.0g Icing sugar
- 1.0tsp Vanilla sugar
- 1.0Tbsp Lime juice
- 100.0g Cream cheese
