How to make vampire cookies

I made these cookies in honour of the new season of True Blood starting tomorrow. It's also a great Halloween treat! (credit goes to bakingbites.com for the recipe!)

Cream together butter and sugar until smooth. Then beat in egg and vanilla extract.

Form the dough into 2 flat, round discs with your hands, wrap in Saran wrap and refrigerate for about an hour. Place each one on a shelf close to the centre-back of your fridge - the coolest part.

After the dough has cooled, remove 1 disc and roll to 1/8" thick with a rolling pin (lightly flour the surface). Cut out your cookies with a cookie cutter. (each disc makes about 12 cookies)

Place the cookies on parchment paper on a cookie sheet and spoon about one teaspoon of jam onto them.

Grab a toothpick and poke 2 nice holes into the top layer of cookie (like a vampire bite!) so that you reach through to the jam in the centre.

Pop them into an oven heated to 325F for about 10-15 minutes.

When they're done let them cool for 5 minutes on the baking sheet then get them on a wire rack to cool completely.
