How to make vampire cookies
I made these cookies in honour of the new season of True Blood starting tomorrow. It's also a great Halloween treat! (credit goes to bakingbites.com for the recipe!)
Gather your ingredients...
Cream together butter and sugar until smooth. Then beat in egg and vanilla extract.
Add flour and salt and mix on low until combined. This step forms the dough texture.
Form the dough into 2 flat, round discs with your hands, wrap in Saran wrap and refrigerate for about an hour. Place each one on a shelf close to the centre-back of your fridge - the coolest part.
After the dough has cooled, remove 1 disc and roll to 1/8" thick with a rolling pin (lightly flour the surface). Cut out your cookies with a cookie cutter. (each disc makes about 12 cookies)
Place the cookies on parchment paper on a cookie sheet and spoon about one teaspoon of jam onto them.
Repeat step 5 with the other disc of dough (the one still sitting in your fridge).
Create a sandwich of each cookie on the sheet, like so, and firmly push together the seams so that the jam is contained inside.
Grab a toothpick and poke 2 nice holes into the top layer of cookie (like a vampire bite!) so that you reach through to the jam in the centre.
This is what your cookies will look like!
Pop them into an oven heated to 325F for about 10-15 minutes.
When they're done let them cool for 5 minutes on the baking sheet then get them on a wire rack to cool completely.
Use a toothpick and some jam to decorate the holes with some more "blood"... Make it look nice and drippy.
And there you have it! Delicious, jam filled vampire cookies!
