INGREDIENTS
Heat about 2 Tbsp cooking oil and sauté potatoes until they start to stick to the bottom of the pan.
Add the turmeric and spices. I didn't provide measurements for the other spices because it really depends on your personal taste :)
Sauté. Smells great already!Love the smell of fried turmeric :)
Add in the garlic and the bottom half of the green onions; sauté. (Yes, I'm a "sautér!" 😉)
The bell pepper. Cover and cook until the bell pepper is tender.
When done, throw is the remaining green onions and a squirt of lemon.
Sauté, and it's done. If you wish, garnish with finely chopped parsley or cilantro/coriander.
Take care when working with turmeric. It can stain instantly on any light-colored surface (like my countertop) & once set it can be over hard or impossible to remove!
- 2.0 Boiled potatoes (medium)
- 1/2 Bell pepper (medium)
- 2.0 Green onions
- 1.0Tbsp Garlic (chopped)
- 1/8tsp Turmeric
- Black pepper
- Paprika
- Chili flakes
- Lemon juice
- Salt
