This is the most common brown sauce made in Norway. Its traditionally used for the norwegian meat balls, fish cakes, meat loaf and lots more. The secret is brown cheese!! Really deliciouse!
Melt your butter.
Add the flour.
Stir. Adjust your amount of flour so that it looks something like this. So just add a little at the time.
And keep stirring so it does not burn. This is important for the flavor. Continious stirring.
It will gradually change consistansy and color. Whitout burning.
When you reach this color it is just right!
Add just a little of your broth. About 1/3 of the total.
Now for the secret. Norwegian brown cheese. You mighthave to go to a specialty store to get it. Ikea might have it.
Add 5 slices, and stirr until it i melted.
Cut the onion in fine slices.
Add that and the rest of the broth to the mix. Stirr and boil it until it a bit thicker. Add some pepper, but remember to taste it so that its to the taste you want.
