Make Tomato Parmesan Soup With Red Quinoa

INGREDIENTS
Start with your fresh tomatoes cut them in quarters, until you reach roughly 8 cups
Put tomatoes in a large saucepan and put in the stock
Add the chopped onion...
Then the basil...
Then all the spices and garlic
These are the cloves, make sure they come out before blending !
I use smoked salt, regular works as well. :)
Close lid, put on simmer, let sit for about 30 mins, stirring every 10 minutes or so
When the tomatoes and onion are boiled and soft add the Parmesan and blend with a hand blender. Make sure to take out the cloves before blending!
Blend !
It should have a nice red orange colour now, add the quinoa
Stir, and cover for 15 minutes on simmer.
Final product! it tastes so good! Very earthy and hearty, the quinoa adds lots of protein as well! I hope you enjoy! Let me know how it turns out!
- 8.0c Tomatoes
- 1.0c Stock (chicken or veg)
- 2.0 Garlic cloves
- 1.0 Chopped white onion
- 1.0tsp Thyme
- 3.0 Cloves
- 3.0Tbsp Fresh basil leaves
- 1/2c Parmesan
- Salt and pepper to taste
- 1.0c Quinoah
- 1.0tsp Onion powder
