Peel the tomatoes, remove the seeds and cut into cubes: it's long, but if you put it to many, it is faster ;-)
Put the tomatoes in a large saucepan (or in a bowl jam) with wine, bouquet garni, onion and garlic x and cook 30 minutes over medium heat. Add the sugar and salt, cook 5 minutes.
Remove the bouquet garni. Mix, put in jars, sterilize as needed and label.
