How to make tomato coulis

This colorful and fragrant sauce is the basis of our tomato sauces.

Peel the tomatoes, remove the seeds and cut into cubes: it's long, but if you put it to many, it is faster ;-)

Put the tomatoes in a large saucepan (or in a bowl jam) with wine, bouquet garni, onion and garlic x and cook 30 minutes over medium heat. Add the sugar and salt, cook 5 minutes.

  • 1.5l White wine
  • 3.0 Lumps of sugar (15 g)
  • 3.0 Onions peeled, cut and sauté
  • 3.0 Garlic cloves, crushed and sauté
  • 1.0 Bouquet garni (thyme, bay, sage, rosemary)
