For this recipe you must make sure it's silken tofu, any other kind of tofu will not give you the correct consistency.
Also make sure you use pure maple syrup not the flavoured kind. You can substitute for good quality honey if you don't want to use maple syrup.
Break up 600g of chocolate into small pieces and place in a bowl.
Put the bowl over a pan of very gently simmering water and let the chocolate melt until it's very smooth. Remove the bowl from the water and allow to cool.
Add the tofu to the bowl of a food processor using the mixing blade not the chopping blade. This can be done in a blender instead if you wanted to.
Purée until very smooth.
Add 1 tablespoon of maple syrup and 1 teaspoon of vanilla extract to the tofu and blend well.
Place tofu mix into a large bowl and poor the melted chocolate over the top and fold the chocolate through thoroughly.
Pour into a large bowl or pour into individual bowls or glasses for serving. Refrigerate for at least 2 hours until set. Enjoy! 💜
