INGREDIENTS
Set out blocks of cream cheese to soften
Grind 30 graham cracker squares (30 half crackers) in food processor and put in mixing bowl
Mix 1/2 teaspoon of ground cinnamon into the ground graham crackers
Spray the cheesecake pan with cooking spray
Melt 1 stick of butter in the microwave
Mix butter into ground graham crackers
Pour graham cracker mixture into cheesecake pan
Press mixture evenly across the bottom of the pan and about one inch up the sides
Place the crust in the refrigerator
Set oven to 325 degrees F
Put the cream cheese in a mixing bowl
Blend cream cheese on low for 1 minute
Add eggs one at a time as mixing
Slowly add sugar while mixing
Mix until combined
Add vanilla extract and sour cream
Zest one lemon
Add the lemon zest
Mix
Get crust and place it on a few pieces of tinfoil and fold up the edges and place in roasting pan
Put cheesecake filling into crust
Put boiling water in the roasting pan halfway up the sides of the cheesecake pan (water not pictured)
Put pan in oven at 325 degrees F for 45 minutes
Let cool in pan for 30 minutes then place in the refrigerator loosely covered for at least 4 hours

- 2.0c Finely ground graham crackers (30 squares)
- 1/2tsp Ground Cinnamon
- 1.0 Stick of unsalted butter (melted)
- 16.0oz Cream Cheese (2 8-ounce blocks)
