Chop the onion finely
I like to cook the onion as I don't digest it easily raw, feel free to skip this if you like the taste of raw onion. Otherwise, put the onion in a small pot or pan with some olive oil and water
When the onion becomes translucent take off the heat and let cool aside
Pit and peel the avocados and place them in a bowl
Mash or blend them according to the texture you want to achieve
I prefer to use flat leaf parsley, but you can use coriander(cilantro) if you prefer. Rinse the parsley and pick the leaves.
Chop them not to finely
Rinse the tomatoes, cut them in 4 lengthwise
And then chop into fine pieces
Add parsley, tomatoes and onion to the avocado, add the juice of the lemon, season with salt and pepper to taste. Stir together until uniform.
Place in a bowl and garnish with some parsley and tomatoes. Serve with corn tortillas. Enjoy!
- 4.0 Ripe Avocados
- 8.0 Cherry tomato
- 1/4 Red onion
- 1/4bnch Parsley
- 1/2 Lemon
- Salt
- Pepper
- Olive oil
- Corn Tortilla chips (optional)
