How to make tehina apple cake
This recipe is from the blog, Jewish Food Experience and is great for the holidays. It has a middle eastern flavor and is simple to make. The cake's rich flavor will please any vegan or meat eater.

INGREDIENTS

Gather your ingredients. Note I am subbing plums for apples which worked great.

Preheat oven to 350 degrees.

Grease and flour a 9 inch round pan. I decided to use a springform pan for easier serving.

In a large bowl, measure out sugar and add tahini.

Using an electric mixer or a wooden spoon, mix well.

In a separate bowl, stir together flour, baking soda, cinnamon, walnuts and diced apples (or other fruit).

Combine orange juice and vanilla in a small bowl.

Add half of the flour mixture to the tehina and sugar and stir. Add half of wet mixture and stir. Add remaining flour mixture and orange juice and stir until evenly combined.

Pour the batter into the prepared pan and bake about 45 minutes to 1 hour, until golden and baked through.

Allow to cool. One suggestion for next time is that I would be more generous with the fruit.

Transfer to a pretty plate and dust with powdered sugar. Bring to a friend's house for a holiday dinner. Enjoy!
- 1.0c Tehina
- 1.0c Sugar
- 1/2c Flour
- 1.0tsp Baking soda
- 2.0tsp Cinnamon
- 1.0c Chopped walnuts
- 1/4c Apples, peeled and diced
- 1.0c + 1 T orange juice
- 1.0tsp Vanilla
- Powdered sugar for dusting
