Make Tasty Lentil Soup🍵 W/ Bacon & Red Wine🍷

INGREDIENTS
All the ingredients except the onions
Add bacon pieces to Dutch oven
Dice up onions
Rinse and peel carrots then chop up into small pieces
Once bacon starts to crisp add carrots and onions
Cook for 2-3 mins
Then add garlic, mix, then the rest of these ingredients to the pot
1 tsp Tuscan or Italian seasons
Ingredients in Tuscan seasoning
Mix well and on low heat - leave to prep lentils
1cup lentils
Rinsed thoroughly
Add lentils salt and pepper
Simmer and mix well
Cover for 10 mins
Then add 2/3 cups red wine
Uncover bring heat up to medium high - add wine and mix uncovered then decrease heat back to simmer.
Add 4 1/2 cups chicken broth
Add 1 1/2 cups water
Increase heat back to med high and bring to a boil
Once you have reached a boil - cover partially and bring heat down to low - cook for 30-35 mins
Once cooked for 30-35 mins remove the bay leaf - stir
Get a hand emulsifier and depending on how smooth or chunky you want your soup- purée to desired texture. You can also use a blender
Once desired consistency is reached - add one tablespoon balsamic vinegar then stir into soup
Return to heat until warm/ hot and serve :) Also can be made vegetarian style just remove the bacon and if you want use a vegetable stock
- 4 slices thick cut bacon cut into pieces
- 2 small/ medium onions or 1 extra large
- 3 large carrots
- 3-4 cloves garlic
- 1 bay leaf
- 14 oz diced tomatos
- 1 tsp Tuscan / Italian seasons
- Salt &pepper to taste
- 1 cup rinsed lentils
- 2/3 cups red wine
- 4 1/2 cups low sodium chicken broth
- 1 1/2 cups water
- 1 tablespoon balsamic vinegar
