Shred half a large head of cabbage. The easiest way is to cut into chunks and grate in a food processor, but you can chop finely If you have the patience my grandmother did!
Add to bowl with shredded carrots and finely minced shallot.
Make the dressing. Whisk together the Maille mustard, Vinegar, Hellmann's mayonnaise and salt and pepper.
Mix everything together, and let it sit. It gets better the next day!

- 1.0 Shallot
- 1/3c Hellmann's Mayonnaise
- 3.0Tbsp White wine vinegar
- 2.0Tbsp Sugar
- 3.0Tbsp Maille whole grain mustard
- Salt and pepper
